Oatformation: Oats and Gluten

Hey, gluten-intolerant friends. I feel your pain. I’m allergic to basically every nut and stone fruit on the face of the earth. Most of the time, I can find alternatives, and so can you. You can have oats, I swear. Let’s break it down:
Oats are classified as a whole grain, which may be confusing to those seeking gluten-free products. While they do contain bran, endosperm, and germ - the components of a grain - oats do not contain gluten. Most oats, however, are processed in facilities that also process wheat. The oats then come in contact with wheat, perhaps even commingling. Those oats cannot be labled gluten-free, but don’t lose hope. There are many oats processed in a wheat-free facility, and are thus labeled gluten-free.
As far as recommendations, Cream Hill sent me their whole grain flour, as well as rolled oats and oat groats, which all proved to be excellent products. You can order online, or check out the offerings at your local health food store.
