Oatformation: Do you think oats take too long to cook?
Don’t cook them.

Seriously. That’s what Whole Foods advises, opting instead to soak the ingredients together overnight. I tried it, and lived to tell the tale.
Want to dip your toe into this hot fermented mess before jumping in? Soak the oats for a half an hour or more, and then add a 1/3 cup more of water and bring the oatmeal to a boil. That’s been my modus operandi for a few weeks now. I soak the oats first, have a morning editorial meeting/walk with the publisher (guess which one of us is on the leash), and then bring them to a boil while I start the coffee.
